APPLE POUND CAKE
Makes 12 to 16 servings
Apple Pound Cake Makes 12 to 16 servings
Vegetable oil and flour for the pan.
3 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 cups corn oil
2 cups sugar
2 teaspoons vanilla
3 med. Apples, peeled, cored 7 shredded (about 2 cups)
1 cup finely chopped pecans
1/2 cup butter
1/2 cup firmly packed lt. brown sugar
2 tsps. Milk
- Grease a 10 inch bundt or tube pan. Dust with flour, shaking out excess. Preheat oven to 325 degrees (at least for 1⁄2 hour).
- Combine the flour, baking soda, salt and cinnamon.
- In a bowl, mix the corn oil, sugar, eggs and vanilla.
- With an electric mixer at medium speed, slowly beat the flour mixture into the oil mixture, beating until smooth. Fold in the apples and pecans.
- Pour batter into prepared pan. Bake for 1 hour and 20 minutes. Cool in pan on wire rack for 20 minutes.
- Meanwhile, bring butter, brown sugar and milk to a boil in a saucepan. Boil for 2 minutes.
- Loosen cake from edges of pan with a knife and turn it out onto rack. Spoon hot sugar mixture over warm cake, letting it run down sides. Let cool completely before serving.
- Store in an airtight container in refrigerator.
